From Cherry to Bean: Three Processing Methods That Transform Flavor

Honey, Washed, and Natural each give the coffee a completely different character. Good to know before you choose your next cup.
Even from the same estate, the post-harvest processing method determines the direction of the flavor. Natural processing dries the whole cherry intact, resulting in a thick body and a pronounced ripe-fruit character.
Washed processing removes the mucilage before drying, yielding a clean, bright cup with sharp acidity, and preserves delicate floral and fruit aromas.
Honey processing sits in the middle, leaving some of the mucilage on the bean during drying, for a sweetness from the coating sugars and a more complex flavor. All three methods are simply different ways of responding to the land of Phu Phana Estate.
